Recipe vegetarian 'Quorn Stroganoff' with mixed salad

A vegetarian version of 'Boeuf Stroganoff' with meat substituting Quorn strips. Vegans can replace the crème fraiche with, for example, Alpro soya cuisine. The feta cheese used in the salad can also be left out so that vegans can enjoy this dish too.
Quorn Stroganoff
Ingredients:
- 2 packs Quorn strips
- 4 tablespoons of olive oil
- 2 onions
- 4 garlic cloves, crushed
- 2 red peppers, cut in strips
- 1 green pepper, cut in strips
- 400 grams of mushrooms, sliced
- 1 vegetable bouillon tablet
- 1 cup creme fraiche (Alpro soya cuisine for vegans)
- fresh parsley
- 3 tablespoons of mild paprika
- Ground black pepper
Preparation:
Peel the onions and chop these into small pieces. Clean the mushroom and slice them. Cut the peppers into small pieces. Heat the olive oil in a frying pan and cook the Quorn strips for a small amount of time. Add the onions and garlic, and stir until the onions look glossy. Add the peppers and mushrooms, and cook for about 5 minutes. Then add the paprika. Crumble the bouillon tablet above the pan and add enough water to slightly cover the strips. Leave for half an hour and then add the fresh parsley and crème fraiche. Add fresh pepper to taste.
Nice in combination with baguette and the following salad!
Mixed salad
Ingredients:
- 1 red onion
- 1 red pepper
- 1 green pepper
- 4 tomatoes
- 1 red paprika
- 12 black olives, without pits
- Small tin of kidney beans
- 200 feta (cheese)
- 2 garlic cloves
- 2 tablespoons olive oil
- 1 teaspoon mild paprika powder
- salt
- (ground) pepper
- fresh parsley
Preparation:
Peal the onion and cut it into tiny pieces. Rinse the paprika and remove the seeds, cut it into strips. Rinse the tomatoes and cut these into pieces. Rinse the parsley with water and cut it really fine. Clean the red pepper, remove the seeds and cut into small pieces. Crumble the feta. Let the kidney beans leak in a colander. Mix the kidney beans, onion, paprika, tomato, pepper and half of the parsley. Peal the garlic and crush it. Mix the olive oil, paprika, salt, pepper and half of the feta. Sprinkle the rest of the feta and parsley over the salad.
