Vegetarian spread: Hummus

A delicious healthy alternative for all vegetarians or those who like variety. Today you can buy hummus (chickpeas spread) in different specialty stores but you can also make it yourself.

Other words for hummus are: hamoshommoshommushomoshoumoushummoshummous, or humus. Hummus is a product that is often used by vegetarians. It is delicious as a spread but also as a dip with crackers or on a special occasion. In the Middle East they simply serve the puree on a plate. There are many variations to this product. Try it!

Origin

Hummus is a sort of puree from Lebanon. You can often find it in these regions as a filling in Lebanese bread or in a soup plate with some olive oil and parsleyThe basis is chickpeas. In Israel and Palestine, this product is often consumed. Through the relationship between the Netherlands and Israel, the product is also available in the Netherlands.

Preparing it yourself

Requirements:

  • one can of chickpeas
  • 2.5 tbsp lemon juice
  • 1.5 tbsp olive oil
  • 1 shallot
  • clove of garlic
  • cumin seed

 

Bring the chickpeas to the boiling point in their own moisture and then boil for 5 minutes. Hold about 1 tablespoon of the liquid aside and pour out the rest. Then make a puree of chickpeas, olive oil and lemon juice. Add the remaining herbs and season to taste.

In the original version of hummus they also add 3 tablespoons of tahiniThat is sesame paste. This can be found today in most supermarkets and certainly in most biological specialist shops.

If you want to make hummus fluid, you can add some water.

If you have any chickpeas left after the preparation, you can make delicious falafel balls. If you want to do this, you can find plenty of recipes on the Internet.

  • 253 kcal or 1058 kilojoules
  • protein: 4.0 grams
  • carbohydrates: 6.0 grams
  • fat: 24.0 grams
  • dietary fiber: 0 grams

Hummus is a relatively low-calorie spread for those who want to lose weight or just keep a healthy balanced diet.
