Vegetarian snacks to munch on or for the barbecue

Tasty and healthy vegetarian snacks that are easy and quick to make. Ideal as a snack but also nice for the barbecue!
Marinated mushrooms
- 5 ounces mushrooms
- 2 tablespoons white wine vinegar
- 1 dl olive oil
- 2 tablespoons paprika
- 1 pinch chilli powder
- 1 tablespoon fresh parsley
Clean the mushrooms and cut them into thin slices. Mix the vinegar, oil, paprika and chili powder. Pour this mix over the mushrooms and mix well. Let the mushrooms marinate in the fridge for 30 minutes.
Garnish with fresh parsley and serve with ciabatta and some butter.
Stuffed tomatoes
- 8 roma tomatoes
- 2 tablespoons yoghurt
- 4 slices of whole-wheat bread
- fresh basil
- salt
- black pepper
Rinse the tomatoes and slice off the tops. Hollow out the tomato with a spoon. Mash the pulp and mix it with yoghurt. Remove the bread crusts and crumble the slices. Stir the mix of bread crumbs, salt, pepper and basil tomato-yoghurt mix. Fill the tomatoes with the mix and put the tops back on the tomatoes. Put the tomatoes in the fridge for one hour before serving.
Avocados stuffed with mushrooms
- 5 ounces mushrooms
- juice of 1 lemon
- 2 tablespoons olive oil
- 1 teaspoon mustard
- 2 garlic cloves, crushed
- salt
- black pepper
- 2 avocados
- 1 tablespoon fresh parsley
Clean the mushrooms and cut them into thin slices. Mix the lemon juice with the olive oil, mustard, garlic, salt and pepper. Pour the mix over the mushrooms and mix everything together. Put this in the fridge and leave it for 30 minutes. Cut the avocados lengthwise and remove the seeds. Put the mushroom mix in the indents where the pits used to be and divide the dressing over the two parts. Sprinkle fresh parsley on top.
Stuffed cucumber slices
- 2 cucumbers
- 1.7 ounces curds
- 3 garlic cloves, crushed
- 2 tablespoons milk
- 2 sour apples
- salt
- black pepper
Rinse the cucumbers and cut them in pieces of about 5 cm. Hollow out the cucumbers and remove the flesh. Cut the flesh into small pieces and sprinkle some salt on the pieces. Leave the pieces for half an hour and dry them off with kitchen roll. Mix the pieces with curds, milk, salt and pepper. Peel the apples and cut them into small blocks. Add them to the cucumber mix and mix well. Fill the cucumber rings with the mix and garnish with fresh parsley.
Tomatoes with pesto
- 8 roma tomatoes
- 3 garlic cloves, crushed
- 0.9 ounces Pecorino cheese
- 0.9 ounces Parmesan cheese
- 3 tablespoons olive oil
- 2 tablespoons fresh basil
- salt
- black pepper
Chop the basil very fine and mix it with oil, salt and pepper. Add the cheese and garlic and mix well. Cut the tomatoes into thick slices and put some pesto on each slice. You can also garnish it with fresh parsley.
