Recipe for roast potato, potato gratin and spicy potato

Potatoes are used a lot for side dishes, but besides the boiled or baked potato there are many ways to make it a little more interesting.  

These three recipes make wonderful side dishes for any meal. The roast potato takes a little time but is delicious, give it a nice twist with the potato gratin or spice things up with the spicy potatoes. 

Roast potato 

Preparation time: about ten minutes for preparation, fifteen minutes for pre-boiling and forty-five to sixty minutes to bake in the oven. 

Ingredients for 4 people 

  • 4 to 6 potatoes (depending on size)
  • sunflower oil
  • salt 

Preparation

Peel and cut the potatoes in quarters.
Bring salted water to the boil in a large pan and add the potatoes to pre-cook.
Let them boil for about 15 minutes, then let them cool down slightly.
Pour three cm (1.2 inches) of sunflower oil into an ovenproof dish and pre-heat in the oven for fifteen minutes at 200 degrees Celsius (392 degrees Fahrenheit). Score the cooled potatoes with a fork, sprinkle with salt and then place in the hot oil. Bake in the oven for forty-five to sixty minutes on 180 degrees Celsius (356 degrees Fahrenheit) while turning regularly for even browning.

When the potatoes are cooked and crispy, remove them from the oven and drain on absorbent paper before serving. 

Potato gratin 

Preparation time: about ten minutes for preparation and forty-five to fiftyminutes to bake in the oven. 

Ingredients for 4 people 

  • 4 to 6 potatoes (depending on size)
  • 125 ml (4.23 oz) milk
  • 100 ml (3.38 oz) cream
  • Oregano, mixed herbs, nutmeg
  • Salt and pepper
  • A few dabs of butter
  • 1 cup grated cheese 

Preparation

Peel and wash the potatoes and cut them into thin slices. Put the potato slices nicely stacked in a greased ovenproof dish.Sprinkle each layer with salt, pepper, oregano, mixed herbs and a little nutmeg. Mix the milk and cream together. Pour the milk and cream mixture in at the side of the dish. Cover the potatoes with the grated cheese and a few pieces of butter.
Bake in the oven at 180 degrees Celsius (356 degrees Fahrenheit) for fifty minutes or until the potatoes are soft and the top brown.

Spicy potato 

Preparation time: about ten minutes for preparation, fifteen minutes for pre-boiling and ten minutes to cook. 

Ingredients for 4 people 

  • 4 to 6 potatoes (depending on size)
  • 4 tablespoons oil
  • 2 teaspoons ground cinnamon
  • 1 tablespoon ground coriander
  • 1 tablespoon cayenne pepper
  • 1 tablespoon sesame seeds
  • 1 teaspoon ground ginger
  • 2 cloves garlic
  • 2 tablespoons butter
  • 1 teaspoon salt 

Preparation

Peel and wash the potatoes and cut them into pieces. Boil the potatoes in water with a little salt until they are done. Remove the water and let them cool down slightly.
Heat the oil in a saucepan. When it is hot add, the spices and seeds and stir for two minutes. Reduce the heat, add the butter and garlic and cook for one minute. Stir constantly to prevent burning.
Add the potatoes to the pan and heat through for eight to ten minutes on medium heat, stirring occasionally. Season to taste with salt.
