Recipe: Spanish potatoes

Is your mouth watering by thinking of delicious peppers, chorizo and this all processed together in one dish? Then I’m sure you will appreciate this dish!
Cooking time: +/- 45 minutes.
Supplies for 4 people:
- 700 grams mushy potatoes, diced
- 3 tablespoons olive oil
- 1 union, into half rings
- 2 cloves garlic, pressed (if you don't like garlic, you can also remove this from the dish)
- 400 grams pomodoro tomatoes, canned, chopped
- 150 grams chorizo sausage (preferably spicy), in slices
- 1 green bell pepper, seeded, in strips
- 1/2 teaspoon paprika powder
- 25 grams stoned black olives, halved
- 8 eggs
- salt en pepper
- 1 tablespoon chopped parsley
- crunchy bread, as side dish (baguette, loggers bread, bread baked in the traditional way,...)
Preparation:
- Put the potatoes in a pan with boiling water and cook them in about 10 minutes. Drain them and set them aside.
- Heat the olive oil in a big frying pan. Fry the union and garlic in 2 to 3 minutes on low heat, till the union is soft.
- Add the tomatoes and let them boil on low heat for about 10 minutes
- Stir the potatoes, chorizo, green bell pepper, the paprika powder and the olives through the union, garlic en tomatoes. Flavor the dish with pepper and salt. Put all in a low baking dish.
- Create 8 holes in the mixture with the round side of a spoon and break an egg in every hole. Add salt and pepper. Bake the dish in 5 to 6 minutes in a warmed oven (220°) till the eggs are set. You decide for yourself how set you want your eggs, adjust the baking time to it. Don't forget to season the dish.
- Sprinkle the potatoes with some chopped parsley en serve the dish directly with some crunchy bread.
