Recipe: potato muffins with sour cream

Muffins are very delicious to eat. Although most people only know sweet muffins, there is also a wide selection of savory muffins. Here is a delicious recipe to make savory potato muffins with sour cream.
General information
The recipe is for 6 muffins of normal size, approximately 3 people can eat it. Preparation time is 15 minutes and cooking takes 30 minutes. The muffins each contain 403 calories and 10.4 grams of fat.
Ingredients
- 225 grams of cooked potatoes
- 2 eggs
- 2.5 deciliters of milk
- 1.75 deciliters of sour cream
- 50 grams of butter
- 300 grams of flour
- 2 teaspoons of baking powder
- 4 tablespoons of fresh chives
The making
If you have all the ingredients ready, put the oven at a temperature of 180 degrees to preheat. Mash the cooked potatoes and beat the eggs well. Slice the fresh chives fine, then sieve the flour into a bowl.
To make the potato muffins, you put the mashed potatoes, eggs, sour cream and butter in a bowl. Then take another bowl in which you mix the flour, baking powder and the chives. After that, add the potato mixture to the flour mixture and stir through quickly.
When the mixture is smooth and no longer contains lumps, you divide the mixture into 6 greased muffin tins. The mixture can never be entirely smooth, as there are mashed potatoes in it. The shapes must have a capacity of 2.5 deciliters and are available from cheap stores like Marks & Spencer, among others. If the oven has heated up, you put the muffins in the middle of the oven. In 25 to 30 minutes they will be done and they can be removed from the oven.
Tips
- The potato muffins can either be served hot or cold.
- A nice variation on the potato muffins is to add a little grated cheese to the mixture. You can also sprinkle the grated cheese on top of the muffins before they enter the oven.
- Instead of chives, you can also use other types of herbs such as parsley and rosemary. Also crushed cloves of garlic can be stirred into the mixture.
