Low carb Meatloaf recipe

Today's market offers a variety of law carb diets, such as the Dukan diet, South Beach, Atkins, and many more... When going on one of these diets, it's important to eat enough proteins. The following recipe with chicken and beef contains practically no carbs and has low sodium levels. 

 

This low carb and sodium limited meat dish goes well with vegetables such as broccoli, green beans, string beans, cauliflower or carrots.

Cooking time: 15 minutes and 60 minutes of baking time.

If you want, you can also do the preparations in advance and reheat the dish later on.

Low carb meatloaf

 

 

 

 

 

Ingredients (for 4 people):

  • 600 grams of lean ground beef
  • 400 grams of chicken breast
  • 1 red onion
  • 3 spring onions
  • 1 small pepper
  • 1 1/2 tablespoon of dried parsley
  • 2 teaspoons of mustard (mild or spicy according to taste)
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of paprika powder
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of ground cumin
  • 1/2 teaspoon of cayenne pepper
  • 1/2 teaspoon of curry powder
  • 2 eggs
  • optional: 1 additional egg white
  • 50 ml of skimmed milk (about 4 tablespoons)
  • 2 1/2 tablespoons of cottage cheese
  • 100 grams of roasted chicken breast in slices (meats)
  • Extra supplies: cake pan, large sheet of baking paper and a food processor or blender 

 

Preparation:

  • Preheat the oven to 170 degrees Celsius. (Look for an electric or gas oven in the description of your own oven)
  • Cut the onion, the spring onions and the small pepper into very smal pieces.
  • Cut the chicken into chunks and chop into tiny pieces using a food processor or blender until you have some kind of ground beaf (chopped chicken breast is leaner than minced chicken)
  • Mix the chopped chicken with the beef
  • Stir the seasoning and mix with the onion, the spring onions, the mustard, the loose stirred eggs, the milk and the cottage cheese.
  • Line the large cake pan with baking paper (you have to be able to cover the top as well)
  • Put 1/3 of the chopped meat in the pan, cover with a few slices of chicken breast, repeat this one more time, if you have any chopped meat or chicken slices left, you can put them on top.
  • Fold the paper so the top is closed, otherwise the meatloaf would be very dry.
  • Put the pan in the middle of the oven en bake the dish for about 60 minutes on 170 degrees Celsius.

You can easily freeze this dish:
cut into slices and put in seperate freezer bags.
